GENERAL INFORMATION

 
In the preparation of mixed drinks in the bar business it is important to accurately measure the amount of liquor poured in order to prepare drinks according to recipes and in order to control beverage costs. Inaccuracy in over pouring expensive liquors can result in substantial lost profits.

Various types of measuring devices have been used in the bartending trade to control portioning including

  1. Classic Jigger or shot glass container

  2. Computerized dispensing systems

  3. Mechanical pour spouts

There are situations where each of these methods is helpful, but the drawback is that many drink recipes (esp. the trendier ones) call for portions ranging from 1/4 ounce to 1 1/2 ounces or more. A drink may call for several 1/2 ounce portions while another drink calls for 1/2 ounce of this and 3/4 ounce of that, or any number of combinations of 1/4, 1/2, 3/4, 1, 1 1/4, etc. of liquor.

Having 6 to 8 different portion amounts that need to be dipensed makes it impractical to use jiggers for each measure. Computerized systems do not handle this many portion sizes and mechanical spouts have one portion setting per spout.
